How to make Turkish Coffee
Ingredients: Start by adding to the ibrik 1 tsp of powder-grind coffee and 1 tsp
of sugar (traditional but optional) to every 2 oz of water (assuming you will be
using 2 oz servings). Add an extra oz of water to the mixture. The combined ingredients
should fit just below the neck of the pot.
Brewing: Traditionally, and for the best taste, expect the brewing process to take
10-15 minutes. Slowly bring the mixture to a frothing boil on the stovetop. As the
froth gets close to the top, just before it boils over, remove the Cezve from the
fire, allow the froth to go down. Serve the froth in equal portions into each cup,
then serve.
Serving: Fill each cup a bit at a time repeatedly, so that all cups have an even
amount. Advise your guests to allow about a minute for the coffee grounds to settle
to the bottom of the cup before gently sipping. Don't drink the grounds.
Basic Greek Coffee Recipe
First fill the briki (coffee pot) with 3oz of water. Add sugar to taste (if you
like your Turkish coffee sweet) and top it with a heaping teaspoon of finely ground
coffee. Stir the coffee a bit. The coffee seals the narrow top creating an oven
effect.
Put on low fire (you can also use your stove). As the water begins to boil it will
foam up through the coffee. As soon as the crema-foam increases and fills the top
layer turn off the fire and lift the ibrik*. Pour slowly into a small demitasse
cup and it's ready for savoring . Pay attention to the foaming because if you don't
it will foam up and create a mess everywhere!
Serve along with a glass of fresh water and a small desert for your friends.
*There is an advanced method of lifting and lowering the briki continuously while
it starts boiling, to increase the amount of crema/foam. Just don't overdo it or
you'll get bitter over-extracted coffee.
Greek Coffee Recipe with "Ouzo"
This is a traditional coffee recipe of the Greek monks in the sacred "Agio Oros".
You will need:
* 2 teaspoonfuls of greek coffee
* 2 teaspoons of sugar
* 1 teaspoon of "ouzo" (traditional Greek alcohol drink)
* 2*3oz cups water
After you prepare your coffee add the Ouzo inside, and serve.
Greek Coffee Recipe with "Cardamom"
This is sort of Arabic version for Turkish coffee recipe. Use a dark coffee blend
ground for Turkish. Get some cardamon, and grind it. Cardamon is used to spice up
and give aroma to the coffee. You will need:
* 2 teaspoonfuls of coffee
* 1-2 teaspoons of sugar as much cardamon as you want
* 2*3oz cups water
Prepare coffee as usual. You will get a delicious exotic coffee, which is very different
from anything you've tasted before!
Greek Coffee Recipe with "Mastich"
Same as the above recipe but instead of cardamom you must use mastich (only produced
in Chios island, Greece)
Armenian Coffee Recipe
Ingredients:
* Cold water
* 1 or 2 cardamom seeds, slightly cracked
* 6 teaspoons powdered sugar
* 6 teaspoons powdered coffee
* 2 drops orange flower water
Directions:
Into a racquie* pour cold water to within 2 inches of top. Place over chafing-dish
flame or electric table stove. Add powdered sugar. Bring to brisk boil. Add coffee
and cardamom seeds. Boil to a froth. Remove from heat and tap pot once or twice
to settle brew. Return to fire instantly. Bring to a quick boil again and tap again.
Repeat procedure twice again. Dip foam from the top into 12 cups. Add orange flower
water to pot and about 1 teaspoon of cold water to settle coffee. Pour into cups.
